Exotic Dried Fruit Compote Recipe
Ingredients
| Generous 1/2 cup no-soak dried peaches | ||
| Dried apricots | 1/2 Cup (16 tbs) | |
| Pineapple chunks | 1/3 Cup (16 tbs), dried | |
| Mango | 2 Ounce | |
| 1 cup unsweetened clear apple juice | ||
| 4 tbsp lowfat plain yogurt (optional) | ||
Directions
1. Put the dried fruit into a small pan with the apple juice. Bring slowly to a boil, then reduce the heat to low, cover, and let simmer for 10 minutes.
2. Spoon into serving dishes and top each serving with a tablespoon of yogurt, if desired. Serve at once.
