Ingredients

 Butter1 Ounce (25g)
 Bacon rasher1 , sliced, finely chopped
 Onions8 Ounce, finely chopped (225 g)
 Carrots4 Ounce, finely chopped (100 g)
 Tomatoes1 Pound, skinned and chopped (450g)
 Chicken stock3⁄4 Pint (hot, 400ml)
 Salt To Taste
 Black pepper To Taste
 Bouquet garni1
 Sugar2 Teaspoon
 Lemon juice2 Teaspoon (10ml)
 Tomato puree2 Tablespoon (paste)

Directions

MAKING:
1) Combine bacon, carrots, onions and butter in a deep casserole.
2) Cover and cook for about 5 minutes.
3) Add the remaining ingredients and cook for about 20 minutes (stir a couple of times during this process).
4) Set aside the soup for about 15 minutes and allow it to take in all the flavors. Remove the bouquet garni
5) Liquidize the soup.

SERVING:
6) Serve the soup garnished with croutons and chopped parsley.
