Ingredients

1 1/2 lb. stewing beef
1 large green pepper €” chopped
1 1/2 c. chianti wine
3 celery stalks €” chopped
1 large onion €” chopped
1/2 lb. fresh mushrooms €” sliced
1 clove garlic €” crushed
1 bay leaf
Salt, pepper

How to make Estofado

1. Dust meat with flour, then brown well in 3 tbsp. oil.
2. Add wine, then cover and simmer slowly for 1 hour.
3. Add remaining ingredients, cover and simmer 20 minutes.
4. Thicken sauce with a mixture of 1/4 c. water 1 tbsp. cornstarch
