Estofado Recipe
Are you looking for a highly appreciated Estofado recipe? If you have plenty of Meat Meatloaf on hand then Estofado is the thing to make. Estofado as a Side Dish never fails to impress. Trust me, once you taste this Estofado you are bound to prepare it again!
Ingredients
1 pound beef stew meat, cut in 1 inch cubes
1 tablespoon cooking oil
1 cup dry red wine
1 8 ounce can tomatoes
1 large onion, sliced 1/4 inch thick
1 green pepper, cut in strips
1/4 cup raisins
1/4 cup dried apricots, halved
1 clove garlic, minced
Bouquet Garni
1/2 cup sliced fresh mushrooms
1/4 cup sliced ripe olives
1 tablespoon all purpose flour
Hot cooked rice
Directions
Brown the meat in hot oil.
Stir in next seven ingredients, 1 1/2 teaspoons salt, and 1/8 teaspoon pepper.
Add Bouquet Garni.
Simmer, covered, 1 hour.
Stir in mushrooms and olives; simmer 30 minutes more.
Discard Bouquet Garni.
Blend 1 cup cold water slowly into flour; stir into stew.
Cook, stirring constantly, till mixture bubbles.
Stir in next seven ingredients, 1 1/2 teaspoons salt, and 1/8 teaspoon pepper.
Add Bouquet Garni.
