Establishment Spinach Recipe
The smell of this Establishment Spinach recipe will draw your husband to the kitchen. I have a weakness for Vegetable, thus I prepare this recipe often. Ingredients
1 1/2 lb fresh spinach, finely chopped
1 tsp vegetable salt
1/4 tsp pepper
1 egg yolk, beaten
1/4 cup heavy cream
2 cups bechamel sauce
1/2 cup grated Gruyere or Parmesan cheese
1 cup fresh mushrooms, sauteed
1/4 cup toasted almonds, sliced
Directions
Steam spinach a few minutes until tender.
Press out excess water.
Season with vegetable salt and pepper.
Blend egg yolk with cream and stir into 2 cups bechamel sauce.
Add cheese and stir until cheese melts; do not boil.
Put spinach in a baking dish and spoon over mushrooms.
Pour sauce over top.
Sprinkle with toasted almonds.
Bake in a 350 degree oven for 10 minutes or until top is golden brown.
