Escarole, Apple, And Mushroom Salad Recipe
Ingredients
2 cups packed escarole
1 large tart apple, sliced
1 cup sliced mushrooms
1/4 cup sunflower oil
1 tablespoon lemon juice
1 tablespoon low-fat yogurt
1 1/2 teaspoons Dijon mustard
Dash of marjoram
Directions
Tear the escarole into bite-size pieces.
Place in a salad bowl with the apples and mushrooms.
In a small bowl, combine the oil, lemon juice, yogurt, mustard, and marjoram.
Beat together well.
Pour the dressing over the salad, toss.
