Ensalada De Tomatillo Recipe

Ensalada De Tomatillo is a truly refreshing salad. I love trying this Ensalada De Tomatillo with basil, zucchini and tomatillos. Yummy and healthy!

Ingredients

1/2 cup (120 ml) salad oil
1/4 cup (60 ml) white vinegar
3 cilantro sprigs, chopped
1/2 of a Jalapeno Chile, seeded and chopped
1 clove garlic, minced
1 1/2 tsp (8 ml) Fresh Oregano, chopped or 1/2 tsp (3 ml) dried oregano, crushed
1 1/2 tsp (8 ml) Fresh Basil, chopped or 1/2 tsp (3 ml) dried basil, crushed shredded lettuce
2 cups (480 ml) zucchini chunks, 1/2-inch pieces
2 red tomatoes, cut into wedges
4 Tomatillos, peeled, washed and chopped sliced green onion

How to make Ensalada De Tomatillo

Prepare dressing in a lidded jar by combining the salad oil, vinegar, cilantro, chopped jalapeno pepper, garlic, oregano and basil.
Cover and shake well to blend.
Arrange a bed of shredded lettuce on 4 salad plates.
Top each salad with some of the zucchini, tomato wedges and diced tomatillo.
Sprinkle with onion.
Shake dressing again; drizzle over salads.
