Ensalada De Tomatillo Recipe
Ensalada De Tomatillo is a truly refreshing salad. I love trying this Ensalada De Tomatillo with basil, zucchini and tomatillos. Yummy and healthy!

| Salad oil | 1/2 Cup (16 tbs) | |
| White vinegar | 1/4 Cup (16 tbs) | |
| Cilantro sprigs | 3 , chopped | |
| 1/2 of a Jalapeno Chile, seeded and chopped | ||
| Garlic | 1 Clove (5gm), minced | |
| Dried oregano | 1 1/2 Teaspoon, crushed | |
| Chopped basil | 1 1/2 Teaspoon, shredded | |
| Zucchini | 2 Cup (16 tbs) | |
| Red tomatoes | 2 , cut into wedges | |
| 4 Tomatillos, peeled, washed and chopped sliced green onion | ||
Directions
Prepare dressing in a lidded jar by combining the salad oil, vinegar, cilantro, chopped jalapeno pepper, garlic, oregano and basil.
Cover and shake well to blend.
Arrange a bed of shredded lettuce on 4 salad plates.
Top each salad with some of the zucchini, tomato wedges and diced tomatillo.
Sprinkle with onion.
Shake dressing again; drizzle over salads.
