 Butter2 Tablespoon
 Onion1 Small, thinly sliced
 Carrot1 Small, thinly sliced
 Stalk celery1/2 , chopped
 Flour2 Tablespoon
 2 1/2 cups milk or chicken broth
 Bay Leaf1
 Parsley sprigs2
 Nutmeg1/8 Teaspoon
 Salt To Taste
 Pepper To Taste

Directions

Heat the butter and saute the onion, carrot and celery over low heat for five minutes.
Add the flour and stir in the milk or chicken broth gradually.
Add the bay leaf, parsley, nutmeg, salt and pepper.
Simmer over low heat for 20 minutes until the sauce is reduced to two cups.
Strain the sauce before serving.
