Enriched White Sauce Recipe
Ingredients
| Butter | 2 Tablespoon | |
| Onion | 1 Small, thinly sliced | |
| Carrot | 1 Small, thinly sliced | |
| Stalk celery | 1/2 , chopped | |
| Flour | 2 Tablespoon | |
| 2 1/2 cups milk or chicken broth | ||
| Bay Leaf | 1 | |
| Parsley sprigs | 2 | |
| Nutmeg | 1/8 Teaspoon | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Heat the butter and saute the onion, carrot and celery over low heat for five minutes.
Add the flour and stir in the milk or chicken broth gradually.
Add the bay leaf, parsley, nutmeg, salt and pepper.
Simmer over low heat for 20 minutes until the sauce is reduced to two cups.
Strain the sauce before serving.
