English Galette Recipe

Ingredients
4 medium apples
2 eggs beaten
1 1/2 cups (375 mL) milk
11/2 cups (375 mL) flour
2 tsp (10 mL) baking powder
2 tbsp (30 mL) sugar
1/2 tsp (2 mL) salt
2 tbsp (30 mL) butter
Juice and grated rind of 1 lemon
Directions
Peel the apples, core them and chop or coarsely grate.
Add beaten eggs to milk, beat a few seconds.
Mix together the flour, baking powder, sugar and salt.
Add to milk mixture, stir.
Place the butter in a small microwave-safe bowl and microwave 40 seconds at HIGH.
Stir the melted butter into the mixture.
Mix together the grated or chopped apples, the lemon juice and rind.
Add to batter, mix well.
Place in a round 10 1/2-inch (26 cm) microwave-safe dish.
Microwave at HIGH 10 minutes.
There may be a spot in the middle that is still soft.
If so, microwave another 2 minutes at HIGH.
Sprinkle top with a spoonful or two of dark brown sugar, let stand 10 minutes.
