Endives With Cucumber Mayonnaise Recipe
Ingredients
| 1/2 cucumber, peeled and seeded | ||
| Mayonnaise | 1 1/4 Cup (16 tbs) | |
| Paprika | 1/4 Teaspoon | |
| Tabasco sauce | 1/4 Teaspoon | |
| Lemon juice | 1 Teaspoon | |
| 3 endives, separated, leaves cut in 1/2 | ||
| 1 apple, peeled, cored and sliced | ||
| 4 slices Black Forest ham, in julienne | ||
| Pine nuts | 2 Tablespoon | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Place cucumber in food processor and puree.
Add mayonnaise, paprika, Tabasco sauce, lemon juice, salt and pepper; blend 30 seconds.
Set aside.
Arrange endives, apple and ham in large salad bowl.
Add cucumber mayonnaise to taste, mix well.
