Endives With Cucumber Mayonnaise Recipe

Ingredients

 1/2 cucumber, peeled and seeded
 Mayonnaise1 1/4 Cup (16 tbs)
 Paprika1/4 Teaspoon
 Tabasco sauce1/4 Teaspoon
 Lemon juice1 Teaspoon
 3 endives, separated, leaves cut in 1/2
 1 apple, peeled, cored and sliced
 4 slices Black Forest ham, in julienne
 Pine nuts2 Tablespoon
 Salt To Taste
 Pepper To Taste

Directions

Place cucumber in food processor and puree.
Add mayonnaise, paprika, Tabasco sauce, lemon juice, salt and pepper; blend 30 seconds.
Set aside.
Arrange endives, apple and ham in large salad bowl.
Add cucumber mayonnaise to taste, mix well.
