4 endives
2 tomatoes, sliced
8 artichoke hearts, halved
2 tbsp (30 ml) olive oil
1 tbsp (15 ml) wine vinegar
Salt and pepper
1 tbsp (1.5 ml) chopped parsley
Directions
– In a serving dish, arrange endive leaves, sliced tomatoes and artichoke halves and set aside.
