Endive Leaves In Oil Recipe
Ingredients
1 large bunch endives (approx size of a large lettuce)
2 large onions, chopped
3/4 cup olive oil
Salt
Directions
Wash and chop the endive leaves, then boil in a large pot of boiling water until tender — approx 1/2— 1 hour.
Drain and squeeze excess water out of the leaves with the palms of the hands, forming large balls.
Undo the balls, and spread on a platter.
Fry the onions in the oil until golden.
Remove half the onions and set aside.
Add the endive leaves and salt to the onions and oil in the pan and saute for 10 minutes, stirring constantly.
Turn out onto a platter and cover with the remaining onions.
Serve hot or cold with bread or in a sandwich.
