Belgian endive - 8 heads
Butter - 1/4 cup
Chicken stock - 1 1/4 cups
Light brown cane sugar - 2 1/2 tsp
Lemons - 2

Directions
GETTING READY
1 Prepare the Belgian endive by cutting out part of the tough base.
2 Rinse and dry thoroughly.
3 Cut lengthwise in half.
MAKING
4 In two skillets, divide the butter in half.
5 Heat until it foams.
6 Add the endive pieces, spreading them out in a single layer in the hot butter.
7 Cook over moderately high heat until lightly browned.
8 Turn carefully and brown the other side.
9 Divide the stock equally between the two skillets, cover tightly, and reduce the heat.
10 Simmer for 5 minutes.
11 Squeeze out juice from the lemons and strain.
12 Add in sugar to the juice and mix well.
13 Sprinkle the sweetened juice all over the endive.
14 Increase the heat to caramelize slightly.
