Endive With Ham Recipe

8 endives
 
8 thin slices boiled ham
 
1/2 cup beef broth
 
3 cups mashed potatoes
 
1/2 teaspoon grated nutmeg
 
2 tablespoons butter

Directions

Drop the endives into boiling salted water and simmer 8 to 10 minutes.
Drain and wrap each endive in a slice of ham.
Place them snugly in a shallow baking dish and add the broth.
Spread the mashed potatoes over the endive so that they are completely covered.
Dust with nutmeg and dot with butter.
Bake in a 425° oven for 15 minutes.
