Endive Duet Salad Recipe
Ingredients
| 1 head of curly endive, hand torn | ||
| 3 heads of endive, minced | ||
| 2 green apples, diced | ||
| Walnuts | 2 Tablespoon, chopped (Dressing) | |
| Olive oil | 1/4 Cup (16 tbs) (Dressing) | |
| Hot mustard | 2 Teaspoon (Dressing) | |
| Wine vinegar | 2 Tablespoon (Dressing) | |
| Port wine | 1 Ounce (Dressing) | |
| Red peppers | 1 Teaspoon, crushed (Dressing) | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
In a salad bowl, mix both kinds of endive.
Cover with diced apples.
In a small airtight jar, combine dressing ingredients.
Seal jar.
Shake vigorously.
Pour dressing over salad, tossing gently.
