Endive and Goat'S Cheese Salad Recipe
Ingredients
| 8 thick slices goat's cheese | ||
| Olive oil | 1 Tablespoon | |
| black pepper | 1 | |
| 300 g/9 1/2 oz curly endive leaves | ||
| 250 g/8 oz cherry tomatoes, halved | ||
| Cucumber | 1 , sliced | |
| 1 small French stick, sliced and toasted | ||
| White wine vinegar | 2 Tablespoon | |
Directions
1. Brush goat's cheese with oil and season with black pepper. Place under a preheated medium grill and cook for 3 minutes each side or until golden.
2. Arrange endive leaves, tomatoes, cucumber, toast and goat's cheese on a serving platter. Drizzle with vinegar and serve immediately.
