Enchiladas Made With Tofu Recipe

Ingredients
28-oz can (840 ml) tomato sauce
1 1/2 tbs (25 ml) garlic powder
1 medium onion, chopped
2 oz (60 g) green chiles, diced
4 tsp (20 ml) chili powder
1/4 tsp (1 ml) basil
16 oz (480 g) Tofu
1/2 cup (120 ml) Soy A Melt, cheddar flavor
3/4 cup (120 ml) Soy A Melt, mozzarella flavor
9-12 small corn tortillas
2 tbs (30 ml) soy oil
1-2 dry oz (30-60 g) black olives, sliced
Directions
Mix tomato sauce, garlic, onion, chiles, chili powder and basil together in a sauce pan and simmer for 15 minutes to create sauce.
Preheat oven to 350°F (180°C).
Drain tofu and crumble.
Grate Soy A Melt (all of the cheddar and 1/2 cup of the mozzarella) or dairy cheese.
Mix tofu and Soy A Melt together in a bowl to create filling.
Heat 1 1/2 tbs oil in frying pan; heat tortillas individually in pan until soft.
Use remaining oil to grease 9x13-inch baking dish.
Place filling in tortilla, roll and place in baking dish seam side down.
Cover with sauce.
Grate remaining Soy A Melt or dairy cheese and sprinkle on tortillas with sliced olives.
Bake covered for 15-20 minutes.
