Lo Carb Cafe -- Enchiladas Recipe Video
An easy recipe to make low carb enchiladas. They are a little higher in carbs than I would usually like for a meal but if you are craving, this is perfect!!! :-D

Ingredients
2 chicken breast, shredded
1/2 cup cheddar cheese, shredded
1 cup enchilada sauce
Mission Tortilla
Directions
1. Preheat the oven to 350 degrees.
2. In an 8x8 inch pan, spread the sauce.
3. Take a tortilla and spread 3-4 tbsp shredded chicken at its center.
4. Add a little cheese to the chicken and roll over the tortilla to form a roll.
5. Place it in the baking dish.
6. Stuff 6 tortillas in similar way.
7. Pour the excess of enchilada sauce on the rolled tortillas. Spread it evenly.
8. Sprinkle the remaining cheddar cheese over the top.
9. Cook it in the oven for 25 minutes.
