Enchiladas Recipe
Enchiladas are a popular mexican recipe prepared with tortillas filled with beef and vegetables of choice. This enchilada recipe is made with a ground beef and onion filling along with cheese to taste. Spiced with chili, these enchiladas are filling and savory.
Ingredients
| Flour tortillas | 12 (About 6 Inch Diameter) | |
| Ground chuck | 2 Pound | |
| Onion | 3 Cup (48 tbs) | |
| Cayenne pepper | 4 Tablespoon | |
| Sharp cheddar cheese | 2 Pound | |
| Canned plain chili | 15 Ounce (1 Large Can, Wolf Brand) |
Directions
Use 10 x 12 x 2 1/2 inch casserole dish.
Warm tortillas in oil in frying pan.
Remove and lay out flat.
Brown ground chuck.
Spoon on tortillas in center, 2 tablespoons each of chopped onions, grated cheese and 1/2 teaspoon cayenne pepper.
Roll tortillas around filling.
Place in casserole dish, seam side down.
Cover with chopped onion and grated cheese.
Pour chili over top.
Sprinkle top of chili with 3/8 inch of grated cheese.
Bake in 320° oven for 30 to 45 minutes.
