Classic Enchilada Sauce Recipe
Here is another of my Enchilada Sauce recipes. I try to make a variety of Enchilada Sauce because I love to have enchilada with lots of sauce on it.This is one of the variants that I made & loved it totally.

Ingredients
1 can red chilly sauce
1 can water,
1 1/2 c. of shortening
1 1/2 tsp. salt
1 tsp. ground cumin seed
1/4 tsp. oregano
1/8 tsp. pepper
2 c. flour
1/4 tsp. garlic powder
Directions
Start with heating a pan,add flour,salt,cumin seeds,garlic,oregano & pepper.In another pan put shortening & heat it till it gets smoky.When the shortening starts to smoke,add the flour mix into it & make a paste.Take a third pan & mix chilly sauce with water,place this pan on medium heat & bring th water & sauce mix to a boil.Add this sauce mix to the flour paste.Stir the two together with a hand beater(on a low speed).Let the mixture simmer for about 15-20 minutes.Pour over the dish that you like.
You can also store the mix for using it in future.It will thicken once after you refrigerate it.You can use warm water to thin it.

Sometimes I just use canned enchilada sauce and jazz it up with chipotle puree. Verdi Enchilada sauce is our favourte. It is made with tomatillos. The photo looks great what is it? Nice big chunks of tomatoes, kidney beans and ???? Looks like chili...............
