| Salt | 1/2 Teaspoon | |
| Butter | 6 Tablespoon | |
| Confectioner’s sugar | 1/2 Cup (16 tbs) |
Directions
Cover the raisins with boiling water, then drain.
Separate the egg yolks from the whites.
Mix the yolks with the sugar, milk, flour and salt and beat until smooth.
Beat the egg whites until stiff and fold into the mixture.
Add the raisins, but do not stir in.
Leave for 10 minutes.
Melt a quarter of the butter in a frying pan.
Pour in a quarter of the mixture and cook gently for 2 minutes.
Turn the omelet over, adding a little more butter to the pan, and cook for a further 2 minutes.
Using two forks, separate the omelet into small pieces and allow to cook for another 30 seconds.
Turn the omelet pieces on to a warmed plate or dish and sprinkle with confectioners' sugar.
Keep warm while you cook the remaining omelets in the same way, using the remaining butter.
Serve warm with cream.
