Elegant Lobster-Tail Salad Recipe
Ingredients
6 4-oz. packages frozen lobster-tails
21b. white potatoes
1/2 c. minced onion
1 tsp. salt
1/4 tsp. white pepper
1 1/2 c. mayonnaise
1/4 c. heavy cream
Directions
"Drop frozen lobster-tails into boiling salted water; bring to a boil.
Reduce heat; simmer for 7 minutes.
Drain; rinse with ice water.
Cut away thin underside membrane; remove lobster from shell.
Chill in refrig- erator.
Place potatoes in large kettle; cover with water.
Bring to a boil; cook until tender.
Drain; peel while warm.
Cut in cubes.
Add onion, salt and pep- per to potatoes.
Mix mayonnaise with cream until smooth.
Pour over potatoes and onion.
Cool slightly; chill in refrigerator.
Cut chilled lobster-tails into bite-sized pieces; add to potato mixture.
Toss until well blended.
