Elegant Antipasto Recipe
Elegant antipasto is a lovely appetizer platter that is prepared in Italian style. Prepared with vegetables like asparagus, onons, peppers and artichokes, chilled with cheese, the antipasto is served with sliced salami pieces and drizzled with the vegetable marinade. topped with remaining cheese, it is simple and classic.
Ingredients
1 jar (16 ounces) mild cherry peppers
1 package (9 ounces) frozen artichoke hearts, cooked and drained
1/2 pound asparagus spears, cooked
1/2 cup pitted ripe olives
1 medium red onion, cut into wedges
1 green bell pepper, cut into triangles
1 red bell pepper, cut into triangles
1 bottle (8 ounces) House Italian with Olive Oil Blend Dressing
1 wedge (4 ounces) Natural Parmesan Cheese, shredded and divided
1 package (8 ounces) Sliced Hard Salami
Directions
Arrange vegetables in rows in 13x9-inch glass baking dish.
Pour dressing and 1/3 cup cheese over vegetables; cover.
Refrigerate 1 to 2 hours.
Drain vegetables, reserving marinade.
Arrange vegetables and salami on serving platter.
Drizzle with marinade; top with remaining cheese.
