Beat at low speed with electric mixer till pieces are the size of small peas.
Add water; beat at low speed just till a dough begins to form (about 15 to 20 seconds).
Form dough into a ball with hands.
Divide into 2 balls.
Roll out and finish as for a single- or double-crust pastry.
Makes two 9-inch single-crust pastries or one 9-inch double-crust pastry.
This pastry is very easy to work with, and even rolls out easily right from the refrigerator.
To make four 9-inch single-crust pastries or two 9-inch double-crust pastries, follow the above method, using a large mixer bowl, except use 3 3/4 cups all-purpose flour, 1 1/2 teaspoons salt, 1 1/2 cups shortening, and 3/4 cup cold water.
Shape dough into 4 balls.
Wrap in clear plastic wrap; store in refrigerator up to 2 weeks.
