Eight Precious Pudding Recipe
Ingredients
1 1/2 cups glutinous rice
3 1/2 cups water
1/2 cup sugar
12 dates or dragon's eyes
24 raisins
12 candied lotus seeds
12 almonds, blanched
Sauce:
1/2 cup sugar
1 tablespoon cornstarch
1 cup boiled water
Directions
Boil the glutinous rice in 3 cups of water for about 15 minutes or until soft.
Add the sugar and another 1/2 cup water and simmer for 15 minutes more.
Rub the bottom of a pudding bowl with a little oil and arrange the fruit and nuts in a pleasing pattern.
Spoon the rice into the bowl without disturbing the fruit and fill the bowl 3/4 full.
Place in a steamer and steam for 3 hours.
Boil the sauce mixture together for 5 minutes and have it boiling just before serving the pudding.
Turn the pudding out onto a flat dish and pour the hot sauce over it.
Serve very hot.
Any fruit or nuts may be substituted for the lotus seeds and dragon's eyes if these are not available.
When making substitutions, keep in mind the color contrast on the white rice.
