Eight Precious Duck Recipe

Ingredients

 
1 6-pound duck
 
1/2 cup barley
 
8 mushrooms, soaked and diced
 
1/4 cup lotus seeds
 
1/4 cup shelled and blanched chestnuts
 
1/2 cup diced pork
 
1/4 cup shelled and blanched almonds
 
1 teaspoon salt
 
2 teaspoons sherry
 
2 tablespoons soy sauce
 
1 teaspoon sugar
 
2 cups stock
 
4 tablespoons soy sauce for gravy
 
4 stalks scallions
 
4 slices ginger
 
1 teaspoon sugar for the gravy

Directions

Boil the barley for about 20 minutes or until it is soft.
Pour away the hot water and soak barley in cold water till required.
Remove the green centers from the lotus seeds as they are bitter.
Drain the barley and mix with mushrooms, lotus seeds, chestnuts, pork, almonds, salt, sherry, 2 tablespoons soy sauce and 1 teaspoon sugar.
Mix thoroughly, stuff in the duck and sew up the opening.
Place the duck in a deep saucepan and add the stock with 4 tablespoons soy sauce, scallions, ginger and 1 teaspoon sugar.
Bring the liquid to a boil and then turn down the heat and simmer for 1 hour, turning the duck twice in the process.
Place the duck carefully in a large bowl and pour the gravy over it.
Serve very hot.
