This Egyptian Mahshy using eggplant recipe reminds me of a similar eggplant recipe from my mother's kitchen. But you have used a different set of spices and the hard egg garnish at the end is the best part! Also, the eggplants were with some kinda sauce? couldn't really figure that out...
