Ingredients

 
2 packages (10 ounces each) frozen, chopped spinach, thawed
 
6 eggs
 
1 large onion, minced (food processor is the quickest way)
 
1 1/3 cups grated Parmesan cheese
 
3/4 cup finely chopped walnutws (food processor)
 
2 cups Italian seasoned bread crumbs
 
1 teaspoon cayenne pepper
 
12 tablespoons butter, melted (1 1/2 sticks)

Directions

Preheat oven to 350 degrees. Squeeze spinach by hand to remove excess water. Please in large bowl. Add all remaining ingredients and mix well by hand.

Form into 1" balls and place 1/2" apart on ungreased baking sheets. Bake 20 minutes, or until golden brown. Allow to cool slightly before removing from pan.
