Eggs Florentine Recipe

This classic egg florentine can be prepared in the microwave in a matter of minutes. Lovely eggs cooked and embedded in a mixture of spinac, flour and onions, flavored with mustard pepper and lemon juice along with cheese. The eggs florentine is sprinkled with breadcrumbs and butter mix before serving.

Directions

Microwave frozen spinach in packages on paper towel until thawed, 7 to 8 minutes; drain.
Microwave 2 tablespoons margarine in 2 cup glass measure until melted, 30 seconds to 1 minute.
Blend in flour, salt, the onion, mustard and dash of pepper.
Stir in milk.
Microwave 1 1/2 minutes; stir.
Microwave until mixture boils and thickens, 2 to 2 1/2 minutes, stirring every minute.
Stir in cheese and lemon juice.
Mix spinach and half of the cheese sauce in square baking dish, 8x8x2 inches; spread evenly in dish.
Make 6 indentations in spinach; break an egg into each.
Sprinkle with salt and pepper.
Pour remaining sauce around eggs.
Cover loosely and microwave 6 minutes; turn dish onequarter turn.
Microwave until eggs are done, 3 to 4 minutes.
Microwave 1 tablespoon margarine uncovered until melted, 30 seconds to 1 minute.
Stir in bread crumbs; sprinkle over eggs.
