Eggs With Vegetables Recipe
Ingredients
1 eggplant slice
2 tomato slices
1 egg
Salt and pepper to taste
Fresh parsley for garnish
Directions
Saute eggplant in a nonstick skillet; place eggplant on a heated serving dish in a warm oven.
Saute tomato slices in the skillet; arrange on the eggplant.
Fry the egg to desired doneness; set over the tomato slices.
Season with salt and pepper.
