Eggs With Sofrito Recipe
Ingredients
| Olive oil | 1/2 Cup (16 tbs) | |
| Onion | 1 , chopped | |
| Garlic | 1 Clove (5gm), peeled | |
| Green pepper | 1 Cup (16 tbs), diced | |
| 2 large tomatoes, peeled, seeded, chopped | ||
| Dash of hot sauce 6 eggs | ||
| 1/4 cup grated Swiss cheese | ||
| Pimiento | 1/4 Cup (16 tbs), stuffed | |
| Spanish olives | ||
Directions
Heat 1/4 cup oil.
Add onion, garlic, and pepper; saute until tender.
Add tomatoes; cook until mixture thickens.
Stir in hot sauce.
Heat remaining 1/4 cup oil in large shallow skillet.
Crack eggs into skillet one at a time.
Fry until whites set.
Sprinkle with cheese.
Cover; fry 2 minutes.
Put eggs on serving platter.
Garnish with sofrito and olives.
