Ingredients
6 hard-boiled eggs
2 tablespoons butter
2 tablespoons flour
1 1/4 cups beef or chicken broth
2 teaspoons Dijon mustard
2 tablespoons finely chopped parsley
Directions
GETTING READY
1)Take a shallow buttered glass or a ceramic baking dish and add the sliced hard boiled eggs.
MAKING
2)Take a glass measuring cup, add butter and heat in the microwave on high.
3)Remove the cup and stir in the flour, add the broth and transfer back to the microwave, cook for 2 minutes until hot.
4)Mix in some mustard and parsley and the sauce is ready.
FINALISING
5)Pour the above sauce all over the sliced eggs.
6)Set the microwave to “Roast Mode” and cook the mixture for about 2 minutes.
SERVING
7)Serve hot and garnish with a dash of pepper and sprigs of parsley.
