Eggs With Cactus Strips Recipe
Ingredients
| 2 cups Cooked Nopalitos | ||
| 1 jar (15 oz.) nopalitos, drained and rinsed | ||
| Salsa Fresca (page 48) or purchased salsa | ||
| 6 flour tortillas (7- to 9-inch diameter) | ||
| Shredded Cheddar cheese | 2 Cup (16 tbs) | |
| Tomatoes | 2 Cup (16 tbs), chopped | |
| Eggs | 6 Small, poached | |
Directions
Prepare Cooked Nopalitos and Salsa Fresca; set aside.
Place tortillas directly on center rack of a 350° oven and bake until crisp and lightly browned (6 to 8 minutes).
Remove from oven and place on baking sheets; sprinkle with cheese, nopalitos, and tomatoes.
Return to oven and bake until cheese is melted (5 more minutes).
Place an egg on top of each tortilla.
Offer salsa to spoon over individual servings
