Ingredients

 
1 avocado, peeled and sliced
 
2 tablespoons lemon juice
 
1 medium sized onion, minced
 
1 small clove garlic, mashed
 
2 green peppers, finely chopped
 
2 small hot pickled peppers, minced
 
1/2 teaspoon chili powder
 
1/3 cup tomato catsup
 
1 tablespoon each butter and lard
 
4 tortillas
 
4 eggs
 
Salt and pepper to taste
 
4 garlic link sausages, sliced
 
2 tablespoons shredded sharp Cheddar cheese

Directions

Sprinkle avocado with lemon juice; chill.
For the sauce combine onion, garlic, green peppers, hot peppers, chili powder, and catsup; set aside.
In a frying pan, melt butter and lard; fry tortillas until light brown on both sides; set each on a heated plate.
Fry eggs; season with salt and pepper.
Set one egg on each tortilla; brown the sausages.
Garnish each plate with avocado on one side, sausage on the other; spoon sauce over egg; top with cheese.
