Ingredients

 
SAUCE:
 
2 oz (60 ml) Fresh Mushrooms (such as fresh Oyster, Chanterelles, Shiitake or Japanese Honey Mushrooms), chopped
 
2 tbs (60 ml) butter
 
2 tbs (60 ml) flour
 
1/2 cup (120 ml) chicken broth pepper, to taste
 
1/2 cup (120 ml) dairy sour cream
 
1/4 tsp (1 ml) Worcestershire sauce dash hot pepper sauce
 
3-4 English muffins, split and toasted
 
6-8 poached eggs Watercress Sprigs, for garnish

Directions

For Sauce, saute mushrooms in melted butter for 3 minutes or until tender.
Stir in flour.
Add chicken broth; cook and stir until mixture thickens.
Stir in sour cream, pepper, Worcestershire and peppdr sauce.
Cook and stir 2 minutes more or until mixture is heated through.
