Ingredients

 8-7.5 cm baked blind tart shells
 250 ml cooked crayfish tails or shrimp meat
 250 ml grated medium cheddar cheese
 Eggs8
 375 ml hot cheese sauce
 30 ml red caviar
 30 ml black caviar

Directions

Place the crayfish tails into the tart shells.
Sprinkle with cheese and bake in a preheated 400°F (200°C ) oven for 4-5 minutes.
While shells bake, poach the eggs.
Place 1 egg in each tart shell.
Cover with cheese sauce, sprinkle with caviar and serve at once.
