Eggs Blackstone Recipe

Ingredients
2 cups mayonnaise
6 slices whole grain bread, toasted or 3 "pitas"
Split in half and toasted
6 fresh tomato slices
6 eggs
6 sprigs parsley for garnish
Directions
Set a bowl of mayonnaise in a larger bowl of hot water in order to bring it to a warm temperature.
Stir it often and take care that it does not separate.
Toast bread.
Top each slice with a tomato slice.
Heat in a low oven (275-300°F.) while poaching the eggs.
Place poached egg on top of tomato slice.
Spoon warm mayonnaise over the egg, letting it run down over the tomato and bread.
Top with a sprig of parsley and serve immediately.
