 Eggs6 Small
 Ham6
 English muffins3 , halved
 Butter - as required
 Madeira1/2 Tablespoon
 Hollandaise sauce - as required
 Paprika - to taste
 Parsley - as required, fresh sprigs

Directions

MAKING
1) In a frying pan, saute the ham slices in a little butter, turnthe slices and drizzle over the Madeira, if used.
2) Place a ham slice over each muffin half, then lay a poached egg and spoon over the hollandaise sauce.
3) Sprinkle with the paprika to taste and garnish with fresh parsley sprigs.

SERVING
4) Serve the Eggs Benedict, immediately on individual serving plates.
