Low Fat Eggs Benedict Recipe
Ingredients
| 1 English muffin, split and toasted | ||
| 1 1/2 ounces cooked Canadian bacon slices | ||
| Egg | 1 Medium, poached | |
| 1 tablespoon imitation mayonnaise | ||
| 1 caper or 1/2 teaspoon minced fresh parsley | ||
| 1 teaspoon imitation (or diet) margarine (optional) | ||
Directions
Cover one muffin half with Canadian bacon.
Top with poached egg.
Spread with mayonnaise.
Place under preheated broiler for 1 minute to heat.
Garnish with caper or parsley.
Serve with remaining muffin half, spread with margarine, if desired.
