Ingredients
Scallops- 3/4 pound (bay or sea)
Oil- 4 tablespoons
Onions- 3/4 cup, chopped
Salt- 1 teaspoon
Pepper- 1/4 teaspoon
Eggs- 4nos
Soy Sauce- 1 tablespoon
Scallions- 6nos, thinly sliced
Directions
GETTING READY
1) If bay scallops are used leave the whole, quarter the sea scallops.
MAKING
2) In a skillet, heat oil and sauté the onions, salt and pepper for 5 minutes.
3) Add the scallops and cook for 5 minutes.
4) In a bowl, lightly beat together the eggs, soy sauce and scallions.
FINALIZING
5) Pour the eggs mixture over the scallops and simmer until eggs are set.
6) Turn out when the mixture sets.
SERVING
7) Serve hot as a side dish.
