1 pound cherries, pitted, or 1 (1 pound) can pitted Bing cherries, drained
 
4 eggs
 
1/2 cup sugar
 
1 teaspoon cinnamon

Directions

For fresh cherries, barely cover therm with water, bring to a boil and cook 5 minutes. (Canned cherries need not be cooked.) Drain the cherries, puree in a blender and force through a sieve.
In the bowl of an electric mixer, beat the eggs until foamy.
Add the sugar and cinnamon and continue beating until thick and creamy.
Fold in the cherry puree.
