Ingredients
1 tablespoon minced fresh basil, thyme, rosemary ororegano
1 tablespoon minced fresh parsley
1 large garlic clove, peeled and minced
1 medium size eggplant, about 1 pound
Salt and freshly ground black pepper, to taste
2 tablespoons olive oil
Directions
Preheat oven to 350°F.
Mix together the minced basil, parsley and garlic.
Cut the eggplant into halves.
Cut several slits in the eggplant flesh, being careful not to cut through the skin.
Push the herb and garlic mixture into the slits.
Season eggplant with salt and pepper, and drizzle with olive oil, about 1 tablespoon per half.
Bake eggplant halves for 30 minutes.
