Eggplant Salad Recipe
Eggplant Salad is a surprisingly tasty salad. I honestly don’t like eggplants but this Eggplant Salad is simply delicious. I prepare this often for our backyard barbecue dinners as this salad goes exceptionally well with barbecued food!! Experience the wonder of the Eggplant Salad with this wonderful recipe.
Ingredients
1 eggplant
salt and pepper
3 tablespoons olive oil
1 onion, chopped
2 cloves garlic, finely chopped
3 tomatoes, skinned, seeded and chopped
2 tablespoons chopped parsley
1 tablespoon lemon juice
Few lettuce leaves
Directions
Cut the eggplant into cubes. Place in a colander, sprinkle with salt and leave for 30 minutes. Rinse and dry with kitchen paper. Heat the oil in a frying pan, add the onion and eggplant and fry for 8-10 minutes, stirring occasionally, until golden. Add the garlic and tomatoes and fry for 2 to 3 minutes. Leave to cool, then mix with the parsley, lemon juice, and pepper to taste. Arrange the lettuce leaves in a serving dish and spoon the salad into the centre
