Ingredients
3- 4 medium eggplants, peeled and sliced 1/4" thick
1 Tbs coarse salt salt
1 cup flour
1 egg beaten with 1 Tbs cold water
1 cup Italian seasoned breadcrumbs
1/2 cup parmesan cheese
1 jar tomato and basil sauce (without sugar), or 2 cups homemade sauce
1/2 cup olive oil
4 oz grated mozzarella
1 tsp dried oregano
Directions
Place eggplant slices on a paper towel lined tray and sprinkle 1/2 Tbs coarse salt over. Turn to other side and sprinkle salt. Let sit for 30 mins to remove bitterness. Rinse off salt and pat dry. Season flour with salt and pepper. Dredge eggplant in flour. Coat eggplant in eggwash and coat with breadcrumbs. Refrigerate coated slices, covered for about 1 hour. Heat olive oil in a large
cast iron skillet and fry eggplant slices, turning when golden. Remove to drain on a paper towel lined tray. Remove excess olive oil from pan, pour 1/4-1/2 cup sauce over bottom of pan. Keep over medium flame. Place a single layer of fried eggplant slices in pan. Top with 1/2 cup sauce. Top with 2 Tbs parmesan cheese, and 1/3 of the grated mozzarella. Top with another layer of eggplant slices. Again, sprinkle 2 Tbs parmesan and 1/3 of the mozzarella. Add 1/2 cup sauce and the remaining mozzarella. Sprinkle with some dried oregano. Continue to cook about 5 more mins.

I'm cooking it right now...a little different as I am using goat cheeses. mmmm
May I ask how you care for the iron skillet after the use of the Marinara sauce as I heard it can take off the seasoned coating?
