Eggplant Parmesan Recipe

This Eggplant Parmesan is one of the best eggplant dishes that I've ever tasted ! Try out this Eggplant Parmesan for your party dinner and tell me if you like it !

Ingredients

 
2 eggs
 
1 teaspoon salt
 
1 large eggplant, pared and cut into 1/3 inch slices
 
Olive oil or vegetable .oil
 
2 8-ounce cans tomato sauce
 
2 teaspoons oregano
 
Garlic salt to taste
 
1/2 cup grated Parmesan cheese
 
1/2 pound sliced mozzarella cheese

Directions

Combine eggs and 1 teaspoon salt.
Dip eggplant slices in this mixture and saute in hot oil until golden brown on both sides.
Combine tomato sauce, oregano, and gar lic salt.
Place half the eggplant slices in the bot tom of the slow cooker.
Top with half the Parmesan cheese and half the mozzarella cheese.
Cover with half the tomato sauce mixture.
Repeat.
Cover; cook on low about 1 hour, until heated through.
