Eggplant Crepes Recipe

Ingredients

 
1 eggplant, sliced Into 1 cm thick disks
 
50 mL 1/4 cup fresh basil, chopped
 
25 mL 2 tbsp corn oil
 
50 mL 1/4 cup Sbrinz cheese, grated
 
1 garlic clove, finely chopped
 
ground pepper, to taste

Directions

Preheat the oven to 220°C (425°F).
Place the eggplant slices onto a cookie sheet and cook for 30 minutes.
While the eggplant is cooking, combine the basil, oil, cheese, garlic and pepper in a bowl and mix well.
Pour the mixture onto the eggplant slices and broil for 2 minutes, until the cheese mixture browns.
