Spicy Eggplant Curry Recipe Video

Eggplant Cooked in Exotic Spices is our "healthy" version of the traditional Indian Aachari Baingan in which the eggplant is deep fried. The combination of fennel seeds and onion seeds, with the tanginess of the tomatoes, adds so much flavor to the buttery eggplant. It is a perfect dish that is sure to please even those who don't normally care for eggplant.

Ingredients

 
Oil – 1 tbsp
 
Kalonji ( Onion Seeds) – ½ tsp
 
Saunf ( Fennel Seeds) – 1 tsp
 
Jeera ( Cumin Seeds) – ½ tsp
 
Rai ( Mustard Seeds) – ½ tsp
 
Haldi – ½ tsp
 
Ginger– 1 tsp (roughly crushed)
 
Garlic – 1 tsp (grated)
 
Tomatoes – 2, 8oz cans, diced
 
Salt – to taste
 
Chili powder – ½ tsp or to taste
 
Eggplant – 4 long Chinese style, diced

Directions

MAKING
1 In a wok, heat oil.
2 Put in all the seeds- onion, fennel, cumin and mustard.
3 Once the mustard seeds sputter and the Jeera seeds get a golden color, add haldi, ginger and garlic, sauté for a minute.
4 Add in tomatoes and cook covered, stirring frequently, till the mixture leaves oil.
5 Add in diced eggplant and mix well.
6 Cook covered on medium heat till the eggplant is done. Be careful not to overcook.
7 Season with salt and chili powder, mix well.

SERVING
8 Serve hot with your choice of bread.

TIP
The secret to this recipe lies in the tomatoes mixture cooking well, so have patience and enjoy the process.

In India, eggplants are cooked in many ways with loads of spices in it. Another great dish that we have is spicy eggplant curry, its low fat, low calories and tastes extremely delicious. It even pairs well both with rotis and rice, so you don’t need to worry about what to serve with this particular eggplant curry. I like the dish a bit tangy so add little extra tomatoes. One can alter the ingredients slightly to suit tastes but by all means this dish is something that can be made almost every day.
