Ingredients

 
1 peeled eggplant,diced
 
1/4 c. butter, melted
 
1/4 c. flour
 
1/2 tsp. cayenne pepper
 
1/4 tsp. salt
 
1 c. milk
 
1/2 lb. sharp cheese, grated
 
Bread crumbs
 
Butter

Directions

Boil eggplant in salted water until partially cooked; drain well.
Melt butter in double boiler; stir in flour until smooth.
Add seasonings.
Stir in milk gradually.
Cook, stirring constantly, until thickened.
Remove from heat; add cheese, stirring until melted.
Place eggplant in casserole; cover with cheese sauce.
Top with bread crumbs; dot with butter.
Bake at 350 degrees for about 20 minutes or until heated through.
