Eggplant Balls Recipe
Ingredients
| 7 Ige. peeled eggplant, sliced | ||
| Eggs | 2 , beaten | |
| Pepper | 1 | |
| Biscuit mix | ||
| Oil | ||
Directions
Cook eggplant in boiling salted water until tender; drain.
Mash eggplant; add eggs and pepper.
Stir in enough biscuit mix to make soft dough.
Drop by spoonfuls into deep hot oil.
Fry until evenly browned.
Drain on paper towel; serve hot.
