Ingredients
1 sm.eggplant
1/3 c.olive oil
1/2 tsp.Tabasco sauce
1/2 tsp. salt
1/4 c. lemon juice
1 sm. purple onion (opt.)
Directions
Wash and peel eggplant.
Slice into fine strips about 2 inches long.
Combine olive oil, Tabasco sauce, salt and lemon juice.
Add eggplant strips.
Chill.
Garnish with finely chopped onion if desired
